Phil the Flavours, private chef and Quebec culinary creator, welcomes you to his home for a four-course dinner inspired by local, seasonal products and some boreal flavors. Between the services, Phil shares the story of the ingredients, his inspirations, and some of the techniques behind the dishes. More than just a meal at a restaurant, it's an opportunity to meet other guests and experience a real Montreal evening around the table.

Enter the world of Phil the Flavours for an intimate Quebecois dinner in a small group.

The evening begins with a welcome cocktail, then you take your seat at the table to discover a four-course menu inspired by contemporary Quebec.

Phil presents local and seasonal products, some boreal ingredients as well as the inspirations and techniques behind the dishes.

We eat, we exchange, and we take the time to share a real Montreal table.

The evening ends with a boreal infusion.

Menu

Starter Boreal spritz Apple, gin, and balsam fir cocktail, inspired by Quebec flavors.
Starter Autumn velouté Pumpkin curry velouté, topped with a savory granola for texture and contrast.
Starter Seasonal salad Kale, onion, Quebec apple, and cendré goat cheese: a fresh plate highlighting local products.
Main Duck with Quebec small fruits Duck accompanied by Quebec berries and seasonal greens with brown butter.
Dessert Apple and hellebore dessert Seasonal dessert around the Quebec apple, flavored with sweet clover, a boreal flavor reminiscent of vanilla.
Dessert Boreal infusion A hot infusion with boreal accents to end the dinner gently.
